Beef Sirloin Tacos

1 tsp. canola oil
1 cup chopped onion
3 garlic cloves, minced
1 lb. lean ground sirloin
1/3 cup tomato paste
1/2 tsp. salt
1/2 tsp. dried oregano
1/2 tsp. cumin
1/4 to 1/2 tsp. ground red pepper
2 cups water
8 corn tortillas
1 cup chopped tomato
1 cup chopped iceberg lettuce
1/2 cup shredded cheddar cheese
1/4 cup sour cream

Heat oil in a large nonstick skillet over medium heat. Add onion, garlic, and
buffalo; cook 5 minutes or until buffalo is done, stirring to crumble. Add
tomato paste and next 4 ingredients; stir well to combine. Stir in 2 cups
water; bring to a boil. Reduce heat, and simmer 20 minutes or until thick.

Warm tortillas according to package directions. Spoon about 1/4 cup meat
mixture onto each tortilla; top each tortilla with chopped tomato, lettuce,
cheese, and sour cream. Fold in half.
