3 tbsp. fresh lemon or lime juice
3 tbsp. olive oil
3 garlics, quartered
2 tsp. Oregano
4 veal chops
4 slices firm ripe tomatoes
Place juice, oil, garlic and oregano in blender and process until well blended.
Reserve 1 tbsp. marinade. Coat both sides of chops with remaining
marinade, and place in shallow glass dish. Cover and marinate in refrigerator
for 2 hours.
Preheat grill.
Spread reserved marinade over 1 side of each tomato slice. Grill veal chops,
uncovered 12-14 minutes, turning once. Cover and grill 10-12 minutes,
turning once. Place tomato slices on grill during last 6 minutes of
grilling time, turning once. Serve tomatoes along with veal chops
**Can be great with chicken breasts
