2 tbsp. oil
3lb. chunk roast, trimmed all fat
1 large onion, chopped
2 garlics, minced
2 cups ketchup
¾ cup water
¼ cup vinegar
3 tbsp. Worcestershire sauce
2 tbsp. Brown sugar
2 tbsp. Chili powder
1 tbsp Dijon mustard
Salt to taste
Heat oil in a large pot. Brown beef on all the sides evenly. Drain all the
fat Place everything else with beef in the same pot. Bring to boil, stirring
around the meat. Then reduce heat to simmer, covered
Simmer and cook for up to 3 hours or until meat is tender enough for meat to
pull apart easily with fork. Shred meat and serve with hard rolls
