Curried Chicken Salad

2/3 cup mayonnaise
1 tbsp. lime juice
1½ tbsp. curry powder
½ tsp. cumin
11/2 tsp. coriander
3 cups shredded cooked chicken
1 celery, chopped fine
½ medium onion, chopped fine
1 cup fresh or canned diced pineapple
½ cup raisins
½ cup pistachios, toasted and chopped

Mix mayonnaise, lime juice, curry, cumin and coriander in bowl until combined.
Toss chicken, celery, onion, pineapple, raisins and pistachios together in
bowl. Add mayonnaise mixture and toss until coasted. Season with salt
to taste.

Serve or cover and refrigerate for up to 2 days.
