Jalapeno Tarter Sauce:
1 cup mayonnaise
2 tbsp. fresh lime juice
1 to 2 tbsp. finely chopped pickled jalapeño pepper
1/2 tsp. grated lime rind
1/4 tsp. ground cumin
Dash of kosher salt
Combine mayonnaises, juice, pepper, lime rind, cumin, and salt in a small bowl.
Cover and chill until ready to serve. Makes 1¼ cups
South Pacific Dipping Sauce:
½ cup mayonnaise
4 tbsp. sesame or olive oil
2 tbsp. rice vinegar
1 tbsp. soy sauce
2 tbsp. honey
1 tsp. mustard, optional
1 garlic, minced
2 tbsp. green onions, finely sliced
Mix the ingredients and ready to serve. They are good for fried or baked or cooked and/or battered/breaded shrimp, regardless of kind.
Wild Buffalo Sauce:
½ cup mayonnaise
½ cup sour cream
1 tsp. lemon juice
6-8 tbsp. hot sauce
Dash cayenne
Mix the ingredients and ready to serve.
