Dressing:
½ cup plain yogurt
¼ cup minced fresh mint
1 tbsp. honey
2 tsp. orange juice
2 tsp. lemon or lime juice
¼ tsp. salt
Salad:
3 cups thinly sliced shredded Grilled Lemon-Herb Chicken
2 cups cubed honeydew melon
1½ cups cubed peeled ripe mango
1 (6oz.) package Romaine lettuce
Prepare all the ingredients for dressing, stirring with a whisk, cover and
chill.
Combine Chicken, fruits and romaine in a large bowl cover and chill.
Just before serving, drizzle yogurt mixture over salad, and toss gently to coat.
