Stack it Up Chicken Salad

1 peeled, cored fresh pineapple, sliced lengthwise into ½” strips
2 romaine hearts, halved crosswise
2½ lb rotisserie or deli chicken, bones removed and cut into bite-size pieces
1 cup seedless grapes, halved
1 Granny Smith apple, cut into chunks
½ cup Homemade Peanut Dressing (see recipe below)
¼ cup peanut butter
1/8 tsp. red pepper
Water

On four serving plates, stack with romaine, chicken, grapes, apple chunks and
pineapple.

In small bowl, mix dressing, peanut butter and red pepper until well combined.
Add water if necessary, to make a drizzling consistency.
Drizzle sauce over the salad.

Hommade Peanut Dressing:
3 tbsp. rice vinegar
2 tbsp. soy sauce
1 tbsp. peanut butter
1tbsp. honey
1 tbsp. sesame oil
1 tsp. fresh minced ginger
1 tsp. minced garlic
½ tsp. red pepper

Combine all ingredients in a saucepan. Cook and stir until mixture is well combined
