Apricot Pork Chops

½ cup apricot preserves
2 tsp. Dijon mustard
1 tsp. minced garlic
1 tsp. soy sauce
Salt
1/8 tsp. cinnamon
1½ lbs pork lion chops, trimmed

Combine preserves, mustard, garlic and sauce. Set aside. Combine salt and
cinnamon. Sprinkle over both sides of the chops. Heat a large skillet
with some olive oil. Add meat to skillet and cook both sides until well
done. Remove from heat but leave meat in the skillet. Add apricot mixture,
turning meat to coat. Place meat on serving plate and spoon remaining
mixture evenly over the chops
