Quick Curried Beef

1 3.5oz. bag boil-in-bag long-grain rice
1 lb. flank steak, trimmed
1/2 cup sliced green onions
1 tsp. bottled minced garlic
1 tbsp. coriander
1 tsp. cumin
1/2 tsp. salt
1/4 tsp. turmeric
1 14.5oz. can diced tomatoes, drained

Prepare rice according to package directions.

While rice cooks, cut steak diagonally across grain into thin slices.

Heat a large nonstick skillet coated with cooking spray over medium-high heat.
Add onions and garlic; sauté 2 minutes. Add coriander, cumin, salt, and
turmeric; sauté 1 minute.

Add steak; sauté 6 minutes or until done. Add tomatoes, and reduce heat to low.
Cook 3 minutes or until thoroughly heated. Serve over rice.
