Yucatan-Style Pork

2 pork tenderloins
1 tsp. powdered onion
1 tsp. white pepper
2 tsp. parsley flakes
1 tsp. minced garlic
1 tsp. cumin
1 tsp. chili powder
4 tbsp. orange juice

Mix spices and orange juice in small bowl, forming a paste. Lay pork tenderloins
on aluminum foil and rub with the paste. Enclose meat with foil and
place in a baking pan. Bake at 350° for 1½ hours.

After meat is done, pour juices into a mixing bowl, cut tenderloin into slices.

Meat can be served in one of 2 ways:

a. Pull slices apart with two forks and place shredded meat in bowl with the
juices. Mix well and serve on warm flour tortillas with slices of smoked gouda.

b. Moisten tenderloin with a spoonful of pan juices and accompany with following below:

MESQUITE POTATOES
2lbs. potatoes
2 tbsp. olive oil
1 tbsp. Mesquite seasoning

Pour mesquite seasoning onto a sheet of aluminum foil. Cut potatoes lengthwise
into 4 wedges, Moisten wedges with oil; roll in seasoning. Spray a
glass baking dish with oil and place potato wedges cut side down
inside. Bake at 350° until done, 45 minutes to 1 hour.
